Lettuce-Less Salad Recipe
2+ cups veg – 1 cup grape tomatoes + 1 small cucumber, chopped
4-5 oz protein – shrimp! I typically use frozen shrimp to save $ and for ease – you can eat them whenever & don’t have to worry about them going bad in the fridge. And I definitely should have de-tailed them before taking the pics!
100-200 calories of fats – 1/2 avocado
Also have my #1starchPerDay here with 1/2 cup black beans!
Season with salt, pepper, basil & oregano – you don’t need a dressing but if you want one, use a light type like a fat-free vinaigrette
