Tuna on Cucumber Bites
Ingredients
- 1 Tuna, canned (1 can)
- 1 Tbsp Mayonnaise (Tbsp)
- 1 tsp Everything bagel seasoning (tsp)
- 1 Cucumber, small
Instructions
Step 1: Slice cucumber.
Step 2: In a small bowl, combine tuna, mayo, & seasoning.
Step 3: Top onto cucumber pieces as shown in the picture.
Cucumber Open-Faced Sandwiches
Ingredients
- 1 Cucumber, medium
- 2 oz Cheese, sliced, mozzarella, full fat/ regular
- 4 oz Deli slices, turkey
- ½ Tomato, medium
- ¼ tsp Basil, dried
- ¼ tsp Oregano
- ¼ tsp Salt
- 1 Tbsp Balsamic glaze
Instructions
Step 1: Cut cucumber in half long-ways. Scoop out seeds if you like
Step 2: Top cucumber halves with turkey, cheese, and sliced tomato. Drizzle with balsamic glaze. Top with seasonings.
Step 3: No dairy? Use dairy-free cheese or avocado. No turkey? Use extra cheese or tofurkey slices.
Cucumber Goat Cheese & Prosciutto “Lunchable”
Ingredients
- 1 Cucumber, small
- 2 oz Cheese, goat
- 2 oz Prosciutto
- ½ cup Blueberries, fresh
- ½ cup Strawberries, fresh
Instructions
Step 1: Slice cucumbers into coin shapes.
Step 2: Chop up strawberries into small pieces.
Step 3: When ready to eat, top cucumber slices with cheese, prosciutto, and berries.
Step 4: No prosciutto? Use additional cheese. No dairy? Use a dairy-free brand or additional prosciutto.
Low Carb Tea Sandwiches

Ingredients
- 1 Cucumber, medium
- 7½ Tbsp Cream cheese, whipped
- 2 Tbsp Dill
- 2 Tbsp Chives
- ¼ tsp Salt
Instructions
Step 1: Note: 7 1/2 Tbsp cream cheese = 1/2 cup
Step 2: Cut herbs finely.
Step 3: Slice cucumber.
Step 4: In a bowl, combine cream cheese, dill, salt, and pepper. Stir until herbs are mixed in.
Step 5: Spread mixture evenly on sliced cucumber.
Cucumber with Whipped Cream Cheese
Ingredients
- 1 Cucumber, small
- 4 Tbsp Cream cheese, whipped (Tbsp)
- ¼ tsp Everything bagel seasoning
Instructions
Step 1: Cut cucumber in half
Step 2: Top with whipped cream cheese (use a piping bag if you find that easier), then top with everything bagel seasoning (in case you don’t have it, you can easily make it by combining white sesame seeds, black sesame seeds, poppy seeds, dried minced onion, dried minced garlic, and sea salt)
Step 3: No dairy? Use a dairy free cream cheese, or avocado
Rainbow Snack Box
Ingredients
- 1 Yogurt, plain, Greek, 2%, single-serving container
- 1 cup Grapes, red
- 1 Cucumber, small
- 1 Bell pepper, orange, large
Instructions
Step 1: Slice cucumber & bell peppe.
Step 2: Arrange in bento box along with greek yogurt.
Step 3: If you’d prefer a flavored yogurt, choose one with less than 15 gm added sugar per container.
No dairy? Use a dairy-free yogurt, or guacamole.
Grapes, Cheese, & Cucumber with Guac
Ingredients
- 1 oz Cheese, sliced cheese, full fat/ regular
- 1 Cucumber, small
- ¼ cup Guacamole
- 1 cup Grapes, red
Instructions
Step 1: Slice cheese into smaller pieces if you like
Step 2: Slice cucumber, dip into guac
No dairy? Use additional guac
Cucumber Lunchables with Shrimp Avocado Salad
Ingredients
- 1 Cucumber, medium
- 1 cup Tomatoes, grape
- ½ Avocado, small
- 5 oz Shrimp, fresh or frozen
- ⅛ tsp Garlic salt
Instructions
Step 1: Slice cucumber into coin shapes.
Step 2: Spray a pan with an oil spray. Stir fry shrimp ~8 minutes, until cooked through, on medium heat.
Step 3: Cut shrimp, tomatoes, and avocado into small pieces. Combine and season with garlic salt.
Step 4: Top onto cucumbers.
