Tuna Melts on Peppers

Ingredients:

  • 1 bell pepper, green

  • 1 can tuna

  • 1 Tbsp mayonnaise

  • 1/3 cup mozzarella cheese, shredded

  • Dash: everything bagel seasoning

Directions:

  1. Preheat oven to 425 degrees F.

  2. Slice pepper into quarters.

  3. Mix tuna and mayo.

  4. Bake for 10 minutes.

  5. Remove from oven, top with cheese.

  6. Bake for another ~3 minutes.

  7. No cheese? Use a dairy-free cheese.

Tuna Noodle Casserole | 6 Easy Meals to Make with Tuna

Tuna Noodle Casserole

Ingredients:

  • 1 can tuna

  • 1/2 cup beans & legumes, “noodles”

  • 4 cups spinach

  • 1/4 cup Alfredo sauce

  • Dash: bail, oregano

Directions:

  1. Preheat oven to 400 degrees.

  2. This recipe works best when making 2-3 servings.

  3. Cook pasta as box directs on stovetop.

  4. Spray casserole dish with an oil spray.

  5. Combine all ingredients in the casserole dish, bake for 25 minutes.

  6. P.S. I love Rao’s Alfredo sauce which is available at most stores.

Ingredients:

  • 1 apple, small

  • 1 can tuna

  • 1/2 cup guacamole

  • 1 Tbsp scallions

  • Dash: salt, pepper

Directions:

  1. Cut apple and scallions into small pieces.

  2. Mix all ingredients.

Tuna-Stuffed Avocados

Ingredients:

  • 1 can tuna

  • 1 avocado, small

  • 1 cup tomatoes, grape

  • 1 Tbsp mayonnaise, light

Directions:

  1. Mix tomatoes (cut into eighths), tuna, and mayo.

  2. Cut avocado in half, remove pit, scoop in salad.

  3. If making multiple servings, recommend only make for 2-3 days ahead of time to preserve freshness.

Open-Faced Tuna Sandwich with Tomato Side Salad

Ingredients:

  • 1 can tuna

  • 1 slice bread, sourdough

  • 1 Tbsp mayonnaise, light

  • 1 cup tomatoes, grape

  • 1/2 oz sliced cheese, full fat/regular

  • 1/3 Tbsp olive oil

  • Dash: basil, oregano

Directions:

  1. Mix tomatoes, oil, and seasonings to make side salad.

  2. Toast slice of bread.

  3. Mix mayo and tuna, layer on top of toast. Top with cheese. Microwave for 30 seconds or heat in the toaster oven.

  4. Note: 0.3 Tbsp = 1 teaspoon.

  5. No dairy? Mix tuna with dairy-free mayo or yogurt. Add 1/4 avocado, diced, to tomato salad.

Basic Nicoise Salad

Basic Nicoise Salad

Ingredients:

  • 1 can tuna

  • 1 egg, large

  • 1/4 onion, red

  • 1 1/2 cups green beans

  • 1 oz olives, whole

  • 1 Tbsp vinaigrette dressing, more than 50 calories per 2 Tbsp

  • Dash: everything bagel seasoning

Directions:

  1. Hard boil egg. Slice once cooled.

  2. Spray a pan with an oil spray. Stir fry green beans ~5 minutes. Put in the refrigerator to cool for at least 45 minutes.

  3. Chop onion.

  4. Combine all ingredients. Top with seasoning and dressing.
