When it comes to lunch options, SweetGreen is a favorite restaurant choice of mine. They have such a great range of salads and appetisers on the SweetGreen menu that is quite healthy. So many takeaway options aren’t that healthy and you end up paying for something that isn’t even that good for you. If you’re out and about but haven’t planned your lunch, you definitely need to check them out. Aside from the Guacamole Green, I also love the Veggie Caesar with roasted sweet potatoes. Or if you’re after more of a grain bowl, check out the Crispy Rice Bowl with the spicy cashew dressing. It’s packed with shredded carrots and wild rice. Gosh, I could eat there almost every day.

But your wallet probably doesn’t want to stretch to lunch out every day. The cost of eating out all of the time very quickly adds up, especially if you’re a student living on a budget. That’s why learning how to make replicas of your favorite meals is such a great idea. You can still get the flavors you love without the price tag. As a college student, being able to eat the flavors you love, without spending all your money is so important.

Salads don’t have to be complicated or boring. This is one of my favorite dishes to make as it’s super simple. You don’t have to head out to a specialty store to get some sauce that you’re likely to only use one. It’s ingredients you’re likely to have in your cupboard. Feel free to switch out some of the ingredients for what you have on hand if you don’t. This is also a great option to make in a container to take with you to school. You can leave the avocado sealed up to help it keep and slice it just before you’re going to eat. A delicious option that is sure to leave your classmates jealous.

DIY $4 SweetGreen Guacamole Greens Salad

Below I’m going to show you how to make their signature Guacamole Greens Salad, one of my go tos (here’s the original)! It’s a light summery salad, but a great balance of protein and fat to leave you feeling full for longer. Their version uses roasted chicken, but you can easily swap this out for grilled as I have done below. Or if you’re looking for a plant-based option you could use some grilled tofu instead. It’s got avocado for a dose of healthy fats and you can add some sunflower seeds for a little more crunch if you like.

SweetGreen Salad – Guacamole Greens

Ingredients:

  • Lettuce- 1/4 bag

  • Chicken– 4 oz grilled chicken

  • Red Onion– 1/4 diced

  • Cherry Tomatoes– 1 cup, halved

  • Tortilla Chips– Crumble 3-4 on top for a crunch

  • Lime– Squeeze juice on top

  • Add a little vinaigrette dressing if you like

Instructions:

  • Slice the tomatoes, chicken and avocado.

  • Break up the chips into smaller pieces.

  • Arrange all the ingredients in the bowl.

  • Squeeze the lime juice over the top.

  • Enjoy!
